We have a recipe you can enjoy while dieting: Eggplant salad with walnuts! Of course, you can prepare it for your special dinner parties.
MATERIALS
- 2 large eggplants
- 2 green peppers
- 1 green bell pepper
- 2 cloves of garlic
- 1 lemon
- 3/4 cup beaten California walnut intra-
- 150 gr yoghurt
- Olive oil
- Salt, ground red pepper
FABRICATION
Roast the eggplant and peppers on fire. Put it in the water you squeezed half a lemon so that it does not peel and darken. Then finely chop the eggplant and pepper and mix them with half a glass of crushed walnuts. Mix the olive oil and yogurt into a coffee cup and slowly add it. Crush the garlic with salt, mix it with half a lemon juice and add to the mixture. Put the eggplant salad on the serving plate.
Heat some olive oil in a pan and roast the remaining walnuts. Before taking it off the heat, add 2 teaspoons of powdered red pepper. Take it from the stove and pour the walnut oil over the salad. Serve without waiting.
